The best way to learn about bonsai, it by looking at other trees. In order to get an idea of the time required to develop trees, looking at progression series may help. Here a few progressions to give you a sense of time and the steps involved to create bonsai when you have plants from a garden centre, dug up from a garden or purchased as pre-bonsai stock.
